Paté for toasted bread is one of more appreciated recipes of typical Tuscan cooking : it is generally served together with Tuscan  sliced cold meat and vegetables preserved in olive oil. Classical starter course for important occasions, it has a very important role in the so called "Antipasto Toscano" (Tuscan appetizer). Our paté is prepared with fresh chicken's livers, spleens and salted anchovies. Then we add chopped up onions and capers, leave cooking in olive oil and, at the end, enhanced with a dry white wine. This special cream is presented in its original recipe in order to guarantee its taste that is much more superb because of truffle added in (7%). Just imagine to taste this creamy paté on toasted Tuscan bread (unsalted) or simply on a very hot and crunchy fried "Polenta" (Italian maize porridge).
